The importance of protein for optimal health cannot be overstated.

Our body requires 20 amino acids to facilitate the production of protein for the repair of our cells and tissues of the body. Billions of cells need the building blocks of protein to rebuild and regenerate the body's tissues. Protein is also required for the manufacture of CP-450, a protective enzyme that acts as a free radical scavenger and decreases the risk of breast cancer. Of the 20 amino acids, 12 are synthesized by the liver and the remaining eight must be obtained from our food and these are called essential. The richest sources of amino acids include legumes, fresh fish, and free-range poultry, eggs, nuts, seeds, fermented soy, whey protein and fermented dairy products.

A protein meal can enhance your metabolic rate (your fat burning furnace) by up to 25 percent and it will stay that way for 6 to 8 hours. Whey and fermented soy protein added to each meal helps curb your appetite as well because when we are fulfilled nutritionally the body stops craving foods.

Whey protein contains glycomacropeptides which stimulate the hormone cholecystokinin responsible for the release of enzymes from the pancreas and the contraction of the gallbladder and the bowels. Soy and whey protein are both important foods in the prevention and treatment of osteoporosis. Soy in particular has been shown to increase bone density and bone mineral content in the lumbar spine. Researchers also believe that soy may inhibit bone breakdown. Two human studies using soy protein found significant increases in the bone mineral content of the lumbar spine and bone mineral density. Whey protein has also been researched for its ability to promote bone formation.

Whey protein activates osteoblasts, the cells that form bone, and also increases total protein and collagen. Whey protein combined with soy should be part of your osteoporosis prevention or treatment program. Another excellent benefit of soy and whey is that they are relatively high in calcium and magnesium, both important for bone health.

Nails, Hair and Aging Skin Protein and collagen are the ingredients that make strong nails and gorgeous thick, shiny hair. It keeps our muscles from sagging which creates that double-chin and wrinkled skin that we all abhor.

Why Fermented Soy?
Non-fermented soybeans contain enzyme inhibitors that can block protein absorption and they also contain hemagglutin known to decrease the ability of red blood cells to properly absorb oxygen and distribute it through the body. When soybeans are naturally fermented as found in tempeh, miso,tofu, soy yogurt and fermented soy powder, the fermentation process deactivates hemagglutin and enhances protein and isoflavones absorption. Traditional Asian diets containmainly fermented soy foods not isolated soy protein or whole soybeans. Fermented soy powders also provide more absorbable forms (alglycone forms) of the isoflavones genistein and daizein. Dr. John R Lee, M.D. prefers that we chose fermented soy foods in moderation along with a varied diet rich in vitamins, minerals and other essential nutrients.

A study published in the Journal of the American Dietetic Association compared the effects of consuming fermented soy to unfermented soy. Their conclusion was that fermented soy provided an increase in the availability and absorption of the isoflavones in soy.
